I was pretty skeptic about them, when I saw the recipe given by our naturopath at the beginning of my keto journey. I couldn’t imagine how the mix of two fats, and some nuts might taste good. But actually it’s great! And if you’ve never tried them, you’ll be surprised how good it actually is. And the idea gives you so many variations of extra ingredients you can use to make them. Today I’ve made cinnamon option. But if you don’t like cinnamon you can use for example raw cacao.

You can have them as a snack, or addition to your meal, if you need to top up the amount of fats. Remember to use good quality raw coconut oil, and grass fed butter to make sure that you get healthy fats. I use homemade clarified butter (you can also use ghee), but if you don’t have any problems with dairy, you can use regular butter.

It’s also great option if you’re at the beginning of your keto journey, and you still have cravings. Two-three power balls will calm your tummy (and mind) for hours 🙂

They are not only great source of energy abut also vitamins and minerals: vitamins B1,B2, B3, B6 and vitamin E, magnesium, zinc, plant iron, calcium, copper, selenium, phosphorus and potassium. So all the essential nutrients that are necessary for us, to live good and healthy life.

The last good thing about them is, that they are quick and easy to make, so it’s a great option for all the lazy keto users 😉

INGREDIENTS

  • one part raw extra virgin coconut oil
  • one part clarified butter
  • mix of nuts and seeds (almonds, pecans, walnuts, hazelnuts, pumpkin seeds, sunflower seeds)
  • cinnamon

DIRECTIONS

You’ll need equal parts of coconut oil and clarified butter both in room temperature. MIx them together in a bowl using a teaspoon or fork.

Put all nuts to a food processor (or blender) and blend. Transfer them to a bowl with coconut oil and butter. You can also blend slightly the seeds or leave them as they are. Add to the mix as well. Stir to combine, fats will get softer and softer every minute.

Then put mix to the fridge for couple of minutes – it will be easier to roll, heat from your hands melts the fats very quickly so it’s better to make the mix hard before you start rolling. Roll walnut size balls, dip each one in cinnamon and place on the plate. Refrigerate for at least an hour and they are ready to eat.

You can keep them in the fridge (they will melt in the room temperature) for about a week in closed container, so they won’t catch the smells.
